Ice Cream

Submitted by Dave on Wed, 01/18/2017 - 09:15

I love ice cream, unfortunately I've given up sugar, so I don't buy it any more. But the kids love it so I have been trying my hand a making it myself. I have a mixer with an ice cream maker bowl so that makes it a little easier.

The recipe I use is pretty simple

  • 2.5 cups half and half or whole milk
  • 8 egg yolks
  • 2.5 cups whipping cream
  • 1 cup sugar
  • 4 teaspoons vanilla
  • 1/8 teaspoon salt

The steps are as follows:

Bread

Bread is one of our bigger food expenses. We go through at least 3 loaves a week, and at $2.50 - $4.00 per loaf it adds up. I've been trying for years off and on to get a good whole wheat recipe that would come out soft as no one will eat the dense loaves I've made.

I finally did some research and found that Vital Wheat Gluten is the key. I used a recipe I had kicking around and added the gluten for a nice soft loaf!

Yorkshire Puddings

It took me a long time to figure out how to make good Yorkshire puddings but thanks to Jamie Oliver I've finally got it right. The secret is in the proportions.  Equal amounts of egg, milk and flour. I like to make these with roast beef, but also to add sausages for an individual "Toad in the Hole" or make it in a 9inch square pan.
