Yorkshire Puddings

It took me a long time to figure out how to make good Yorkshire puddings but thanks to Jamie Oliver I've finally got it right. The secret is in the proportions.  Equal amounts of egg, milk and flour. I like to make these with roast beef, but also to add sausages for an individual "Toad in the Hole" or make it in a 9inch square pan.

The basic recipe:

  1. Preheat oven to 450oF
  2. Break the eggs into a measuring cup, lightly beat them and then see how much egg you have. 3 eggs should be just around a cup
  3. Then add eggactly the same volume of milk and flour
  4. Add half a teaspoon of salt and beat well
  5. Add a teaspoon of vegetable oil to each cup in a cupcake pan and heat in oven
  6. When oil is hot (and possibly smoking) fill cups to 3/4 full
  7. Cook for 15-20 mins until nicely browned, do not open oven during cooking
